Plate a tomato next to a strawberry and it sounds like a chef showing off — exactly the kind of counterintuitive match the aroma-compound “food pairing” idea (popularized by chef Heston Blumenthal in the early 2000s) was built to surface. But the molecules say it isn't a stunt: strip away the savory and the sugar, and these two are reaching for the same smell.

How to use it

A tomato-strawberry salad with good olive oil, flaky salt, torn basil and black pepper (basil bridges both — see the strawberry & basil piece); a few strawberries dropped into gazpacho; both kept raw so the green aldehydes survive. A sharp, sweet balsamic does the work of reconciling the savory and the sweet.
