Why does beer carry a fruity, floral edge?

Beer is fermented grain — yet it registers as banana, rose, and lavender. That gap between raw material and finished aroma is almost entirely the work of yeast metabolism.

Most of beer's fruit-and-flower character isn't sourced from fruit or flowers — it's synthesized in the fermenter. Yeast strain, fermentation temperature, and hop bill collectively determine which of these three compounds dominates the glass.
