Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast the turkey

  1. Preheat your oven to 400°F (200°C).

  2. Roast the turkey for two hours over a quick and clear fire, basting frequently.

  3. Cover the breast with a piece of white paper to prevent burning.

Make and stuff the filling

  1. In a bowl, combine the bread crumbs, chopped pork, sage, and pepper.

  2. Add the egg and mix well to form the stuffing.

  3. Stuff the turkey with the mixture before roasting.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Provides the main body of meat, which cooks through during the long roast.
Fine bread crumbs
Absorb juices and fat, giving the stuffing body and a soft texture.
Fat pork
Adds fat that keeps the stuffing moist and carries flavor.
Egg
Binds the crumbs and pork into a cohesive stuffing as it sets.
Dried sage
Adds an herby aroma that complements the pork and poultry.

The step that matters

Stuff the turkey before roasting. The stuffing sits in the cavity and must heat through to a safe temperature, so the bird needs to cook long enough for the centre to reach it. Packing the filling loosely leaves room for it to expand and cook evenly.

Swap the sage

How well each one fits the dish's main ingredients (turkey, bread, pork, pepper, egg):

  1. Sagethe original
  2. Thymefits about as well
  3. Marjoramfits less well
  4. Parsleyfits less well

Fit is the average pairing score against turkey, bread, pork, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
