Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt fish
Supplies the savoury, salty flavour that defines the fish balls.
Potatoes
Starch that mashes into a soft body and holds the balls together.
Eggs
Bind the mashed mixture so the balls keep their shape while frying.
Butter
Adds richness and fat, giving a softer, more tender interior.

The step that matters

Drain all the water before mashing. Excess water dilutes the mixture and makes it wet and loose, so the balls may fall apart or absorb too much fat when frying.

Swap the potato

How well each one fits the dish's main ingredients (fish, egg, butter, pepper, flour):

  1. Chivefits about as well
  2. Shallotfits about as well
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against fish, egg, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
