What each ingredient does

Flour
Coats the fish, helping it brown and thickening the sauce slightly.
Butter
Adds fat for richness and helps the onions brown in the pan.
Bermuda onions
Browned in butter, they add sweetness and depth to the sauce.
Port or white wine
Adds acidity and aroma that balance the richness of the butter.
Ketchup or worcestershire sauce
Adds tangy, savory flavor and color to the sauce.

The step that matters

Fry the onions until nicely browned. Browning builds deep flavor through the Maillard reaction and caramelization. Pale onions give a flat, sweet-only taste, so cook them until golden brown before adding liquid.

Swap the mace
