Why it works: Cream and sauce are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 4,787 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- White meat of chicken
- Forms the main body of the timbales, giving them their structure once cooked.
- Cream
- Adds moisture and richness, keeping the timbale mixture soft and tender.
- Egg whites
- Set when heated, binding the mixture so the timbales hold their shape.
- Macaroni
- Forms the outer lining of each timbale, giving a shaped edge around the filling.
The step that matters
Whipping the mixture. Whipping for the full time traps air and helps the egg whites and chicken set into a light, even texture. Under-whipping leaves a dense result, while over-handling can make the egg whites weep or the mixture tough once steamed.
