Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Binds the bread crumbs to the beef so the coating stays on during broiling.
Soft bread crumbs
Form a crisp, browned coating on the outside of the beef.
Heavy cream
Beaten stiff, it lightens and mellows the sharp horse-radish sauce.
Grated horse-radish
Provides the sharp, pungent flavour of the sauce.

The step that matters

Broil the breaded beef over a clear fire. Beef is already rare, so a short, very hot broil browns the crumb coating quickly while keeping the meat from overcooking. Leaving it too long dries the beef and can scorch the crumbs before the coating sets.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pepper, egg, bread, horse, radish, sauce):

  1. Mustardfits better
  2. Capsicumfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, egg, bread, horse, radish, sauce. Candidates are from the same food group and used in at least 100 recipes.
