What each ingredient does
- Turkey
- Provides the main body and bulk of the salad.
- Hard boiled egg yolks
- Their fats and emulsifiers help hold the dressing together and make it creamy.
- Raw egg yolk
- Adds emulsifying lecithin that helps the oil and vinegar stay blended as a smooth dressing.
- Olive oil
- Supplies fat and richness, and when added slowly it forms a stable emulsion.
- Vinegar
- Adds acidity that brightens the flavour and helps balance the richness of the oil.
- Raw egg white
- Whipped to a froth, it adds lightness and airiness to the dressing.
The step that matters
Adding the olive oil. Oil must be added slowly, a few drops at a time while stirring, so the egg yolks can emulsify it. Adding it too fast makes the dressing separate and break into greasy droplets.
Swap the celery
How well each one fits the dish's main ingredients (turkey, egg, mustard, olive, vinegar):
- Capersfits better
- Tarragonfits better
- Thymefits better
