Blackberry Wine
Ingredients
Directions
Prepare the juice
Wash the blackberries thoroughly.
Combine the blackberries with 15 quarts of water in a large container.
Steam the mixture through a bag and sieve.
Ferment
Add 5 lbs. of white sugar to the mixture.
Let it stand for 48 hours in a large tub, stirring once a day and skimming off any foam.
Transfer the mixture into a cask, leaving some space at the top, and seal it.
Allow the wine to age for improved flavor.

What each ingredient does
- Blackberries
- Provide the main fruit flavor, aroma, and natural acidity for the wine.
- White sugar
- Feeds the yeast during fermentation, producing alcohol and carbon dioxide.
The step that matters
Leaving headspace in the cask. Fermentation gives off carbon dioxide and foam, so leaving space at the top keeps the cask from overflowing or bursting. Sealing it then lets the wine age without much contact with air, which helps prevent spoilage.
