Cream Pies

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix 2 cups of sugar, 2 cups of flour, 6 eggs, cream of tartar, and baking soda dissolved in boiling water.

  3. Pour the mixture into a pie crust and bake until golden.

  4. For the cream, combine 1 cup of milk, 2½ cups of flour, ½ cup of sugar, and 2 egg yolks in a saucepan.

  5. Cook over medium heat until thickened, stirring constantly.

  6. Allow the pies to cool completely before adding the cream.
