Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the main body of the puree and, once reduced, its concentrated flavor and thick texture.
Butter
Adds fat and richness, giving the finished puree a smoother, rounder mouthfeel.

The step that matters

Cook uncovered until reduced by half. Cooking off the water concentrates the tomato flavor and thickens the puree. Covering the pan would trap steam and leave it thin and watery.

Swap the onion

How well each one fits the dish's main ingredients (tomato, parsley, pepper, clove, butter):

  1. Carrotfits better
  2. Capsicumfits better
  3. Eggplantfits better
  4. Onionthe original

Fit is the average pairing score against tomato, parsley, pepper, clove, butter. Candidates are from the same food group and used in at least 100 recipes.
