What each ingredient does

Sweetbreads
Provide the tender, rich meat that forms the body of the dish.
Fresh mushrooms
Add earthy flavor and moisture as they release their juices while cooking.
Butter
Adds richness and carries flavor when cooking the mushrooms and forming the sauce.
Flour
Thickens the butter and cream into a smooth, stable sauce.
Cream
Makes the sauce rich and silky, giving it body and a smooth texture.

The step that matters

Blend the butter and flour until smooth before adding cream. Cooking flour in fat, as a roux, prevents lumps and lets the flour thicken the cream evenly. Adding cream gradually keeps the sauce smooth rather than clumped.

Swap the clove

How well each one fits the dish's main ingredients (lemon, mushroom, butter, sauce, flour, cream, pepper):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against lemon, mushroom, butter, sauce, flour, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
