Snow Roll

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cakes

  1. Preheat the oven to 350°F (175°C).

  2. Beat the sugar and egg yolks together for 15 minutes.

  3. Fold in the ground nuts and then gently add the stiffly beaten egg whites.

  4. Pour the mixture into thin baking tins and bake for about 15 minutes.

  5. Allow the cakes to cool completely.

Fill and roll

  1. Whip the heavy cream until stiff, then sweeten and flavor to taste.

  2. Spread the whipped cream on the cooled cake, roll it up, and cut like a jelly cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground nuts
Provide the main body and flavor of the sponge, replacing much of the flour structure.
Eggs
Whipped whites and beaten yolks give the cake its light, airy structure and rise.
Granulated sugar
Sweetens the cake and helps stabilize the beaten egg mixture.
Heavy cream
Whipped into a stiff filling that adds moisture and richness to the rolled cake.

The step that matters

Folding in the egg whites. Stiffly beaten whites hold the batter's air. Folding gently rather than stirring keeps that air in, so the thin cakes stay light and do not collapse.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, egg, cream):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits about as well
  4. Nutsthe original

Fit is the average pairing score against sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
