What each ingredient does

Eggs
Whites provide the shell for the filling, and cooked yolks become the creamy base.
Butter or oil
Adds fat, giving the yolk filling a smoother, richer texture.
Thick cream
Adds moisture and richness, loosening the mashed yolks into a spreadable paste.
Mustard
Adds sharpness that balances the richness of the yolks and fat.
Vinegar
Adds acidity that brightens the flavour of the rich yolk filling.

The step that matters

Beat the mixture until it forms a stiff paste. Mashing and beating break the yolks into fine particles and blend in the fat and cream, so the filling becomes smooth and holds its shape when spooned back into the whites.

Swap the lettuce
