What each ingredient does

Eggs
Provide the hard-boiled whites and yolk filling that form the body of the dish.
Vinegar
Adds acidity that brightens the rich yolk mixture and balances its fat.
Cream
Adds moisture and softness, loosening the yolk paste into a smooth filling.
Colman's mustard
Adds sharp, pungent flavor that cuts through the richness of the yolks and butter.
Butter
Adds fat that makes the filling smoother and richer in texture.
Cracker crumbs
Form a crisp coating that browns when the filled eggs are fried.

The step that matters

Frying the coated eggs. Frying in hot oil until golden brown crisps the crumb coating quickly, so the filling stays set and does not leak out. Oil that is not hot enough lets the coating absorb grease and turn soggy.

Swap the lettuce
