What each ingredient does

American cheese
Melts into a smooth sauce that coats the toast and carries the dish's rich flavor.
Ale or beer
Thins the melted cheese into a pourable sauce and adds a malty, slightly bitter note.
Butter
Adds fat that helps the cheese melt smoothly and gives the sauce a rich mouthfeel.
Mustard
Adds sharp, tangy flavor that cuts through the richness of the cheese.
Bread
Forms the base that holds the sauce and soaks up its flavor.

The step that matters

Add the cheese gradually and keep the heat low while it melts. Cheese proteins tighten and turn grainy or greasy when overheated, so melting it slowly over gentle heat keeps the sauce smooth and cohesive.

Swap the mustard
