Stew

  1. In a stewpan, combine the ox‑tail pieces, stock or water, onion, carrots, herbs, salt, and pepper.

  2. Simmer gently until the meat separates easily from the bones, about 3.5 hours.

Finish and serve

  1. Transfer the meat to a hot dish.

  2. Reduce the gravy.

  3. Strain the gravy over the meat.

  4. Garnish with toasted sippets.

  5. Add a little lemon juice if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-tail
Supplies the meat and gelatinous connective tissue that becomes tender and enriches the gravy during long simmering.
Stock or water
Provides the cooking liquid that gently extracts flavour and body from the meat and bones.
Carrots
Add sweetness and aromatic depth to the gravy as they soften during simmering.
Large onion
Adds savoury depth and aroma to the stewing liquid as it cooks down.

The step that matters

Simmer gently. A gentle simmer lets collagen in the oxtail slowly break down into gelatin, making the meat tender and the gravy rich. A hard boil toughens the meat and makes the liquid cloudy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (onion, clove, carrot, pepper):

  1. Limefits better
  2. Avocadofits about as well
  3. Mangofits about as well
  4. Lemonthe original

Fit is the average pairing score against onion, clove, carrot, pepper. Candidates are from the same food group and used in at least 100 recipes.
