Prunes Confites

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Pierce the prunes in several places to help them release moisture and absorb syrup.

  2. Prepare a concentrated syrup by boiling it five or six times, pouring it over the prunes each time.

  3. After the final boil, add the prunes to the syrup and bring to a strong boil.

  4. Let the prunes sit in the syrup for 48 hours, ensuring the syrup does not cool.

  5. Dry the prunes as you would apricots.
