Soufflé De Riz, Au Marasouin
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Cook 1 cup of rice in boiling water until tender; drain and place in a bowl.
Drizzle the rice with a little marasquin.
Prepare a soufflé mixture as described in previous instructions.
Fold in the egg whites gently.
Layer the soufflé mixture and rice in two soufflé dishes, alternating each layer.
Fill the dishes three-quarters full and place them on a baking sheet.
Bake in a preheated 300°F (150°C) oven for 30 minutes, glazing twice with fine sugar.
Once done, cover with a warm cloche and serve immediately.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
