What each ingredient does

Fresh walnuts
Provide the main flavour and the body of the puree once crushed and sieved.
Whipped cream
Adds air and richness, giving the bavarois a light, creamy texture.
Gelatin
Sets the mixture so it holds its shape when unmoulded and served.
Vanilla syrup
Adds sweetness and vanilla aroma to the walnut puree.

The step that matters

Chilling over ice while stirring. Gelatin begins to set as the mixture cools, so it must be stirred until thickened but still pourable. If it sets too early it becomes lumpy, and if it stays too warm the cream will deflate or the mixture will not hold its shape.

Swap the walnut

How well each one fits the dish's main ingredients (orange, vanilla, syrup, cream, gelatin):

Fit is the average pairing score against orange, vanilla, syrup, cream, gelatin. Candidates are from the same food group and used in at least 100 recipes.
