Grand Bouillon De Poisson

Ingredients

Directions

  1. Prepare the fish by cleaning and cutting them into pieces.

  2. Place the fish in a wide, shallow pot with chopped vegetables.

  3. Add a few glasses of white wine according to the amount of fish.

  4. Put the pot on the stove and reduce the liquid until almost dry.

  5. Cover the fish with hot water and add coarse sea salt.

  6. Skim the liquid carefully; when it boils, move it to the side of the stove.

  7. Add a strong bouquet of leeks, chervil, parsley, thyme, bay leaf, and some spices.

  8. Monitor the cooking; once the fish is cooked, degrease the broth and strain it.
