Directions

Infuse the milk

  1. Put the vanilla bean into the milk.

  2. Boil the milk until thoroughly flavored.

  3. Remove the vanilla bean from the milk.

  4. Strain the milk into the fresh cream.

Make the custard

  1. In another saucepan, combine the egg yolks and sugar, beating well.

  2. Warm the egg mixture over low heat, stirring constantly until slightly thickened, but do not let it boil.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set gently with warmth, giving it a rich, smooth body.
Fresh cream
Adds fat for a rich, smooth texture and a silky mouthfeel.
Milk
Forms the liquid base and carries the vanilla flavor into the custard.
Sugar
Sweetens the custard and balances the richness of the yolks and cream.
Vanilla bean
Infuses the milk with its aromatic vanilla flavor.

The step that matters

Warm the egg mixture gently. Egg yolks thicken when heated slowly, but if the mixture boils, the proteins scramble and the custard turns grainy. Stirring constantly over low heat keeps it smooth.
