Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the croquette and, cooked in milk, gives a soft, starchy body.
Egg yolks
Enrich the mixture and help it thicken into a set, tender filling.
Milk
Cooks the rice until tender and adds moisture and richness to the filling.
Butter
Adds fat for a richer flavour and softer texture in the filling.
Well-beaten egg
Coats each shape so it forms a sealed crust that browns when fried.

The step that matters

Let thicken without boiling. Egg yolks scramble and curdle if they get too hot, so the mixture must thicken gently. Boiling would leave it grainy and make the bolsters hard to shape.

Swap the lemon

  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, milk, butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
