What each ingredient does

Gooseberries
Provide the fruit body and tart flavour that the sauce is built on.
Sugar
Adds sweetness and, as the syrup reduces, helps the sauce thicken.

The step that matters

Boil the combined syrup until it thickens. As water evaporates, the sugar concentration rises and the syrup thickens. Stopping too early leaves a thin sauce, while over-boiling can make it overly stiff or caramelise, so watch the thickness closely.
