What each ingredient does

Hard boiled egg yolks
Emulsify with the oil to form a smooth, thick base for the dressing.
Salad oil
Provides fat that gives the dressing its rich, creamy texture.
Vinegar
Adds acidity that sharpens the flavor and cuts the richness of the oil.
Egg white
Whipped to a froth, it lightens the dressing and adds airiness.
Mustard
Contributes sharp flavor and helps stabilize the emulsion.

The step that matters

Gently stir in the frothed egg white. Folding rather than stirring keeps the whipped egg white airy; vigorous mixing deflates the foam and leaves the dressing dense and flat.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, pepper, mustard, sugar, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Lettucethe original

Fit is the average pairing score against egg, pepper, mustard, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
