Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the crisp, sliced body of the pickle that absorbs the brine and vinegar.
Vinegar
Supplies the acidity that preserves the pickles and gives them their sharp, tangy flavor.
White mustard seed
Adds a sharp, pungent flavor and aroma to the pickling liquid.
Celery seed
Contributes the characteristic celery aroma and flavor to the pickles.
Alum
Helps keep the cucumber slices firm and crisp during pickling.

The step that matters

Pour the boiling mixture over the pickles. The liquid must be fully boiling so it heats the slices and helps drive off air and begin preservation; cooler liquid can leave pickles soft and less safely preserved.
