What each ingredient does

Green tomatoes
Form the bulk of the relish, supplying firm texture once salted and drained.
Onions
Add savory sharpness and bulk that softens slightly during pickling.
Brown sugar
Balances the vinegar's acidity with sweetness and adds depth of flavour.
Cider vinegar
Provides the acidity that preserves the vegetables and gives the pickle its tang.
White mustard seed
Contributes a sharp, pungent flavour that mellows during pickling.
Sea salt
Draws moisture out of the vegetables, firming them and reducing their water content.

The step that matters

Drain the salted mixture well. Salt draws water out of the vegetables overnight. Draining thoroughly removes that liquid so the pickle stays firm and is not diluted when the hot vinegar is added.

Swap the onion
