What each ingredient does

Cucumbers
Form the crisp, firm body of the pickle mix.
Black and white mustard seeds
Add sharp, pungent flavor that deepens as the pickle sits.
Ground mustard
Adds pungency and thickens the vinegar as it blends in.
Cider vinegar
Provides acidity that preserves the vegetables and sharpens flavor.
Cauliflower
Contributes bulk and a firm, crunchy texture after brining.
Onions
Add sweetness and savory depth when softened in the brine and vinegar.

The step that matters

Draining after the brine soak. Vegetables that keep too much brine or water dilute the vinegar and soften the pickle, so they must drain well before the vinegar is added.
