Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Smothered Chickens

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Cut the chickens in the back.

  2. Lay them flat in a dripping pan with 1 cup of water.

  3. Stew the chickens in the oven at 350°F (175°C) until they begin to get tender.

  4. Remove the chickens from the oven.

  5. Season them with salt and pepper.

Smother and brown

  1. Rub together 1½ tablespoons of flour and 1 tablespoon of butter in a bowl, then spread the mixture over the chicken.

  2. Return the chicken to the oven.

  3. Baste the chicken well and cook until tender and nicely browned.

Make the gravy and serve

  1. Mix 1 cup of thickened milk with a little flour into the gravy in the pan.

  2. Heat the gravy on the stove until it scalds.

  3. Pour the gravy over the chickens.

  4. Garnish with chopped parsley if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the main protein, which becomes tender as it stews and roasts.
Flour
Thickens the butter coating and the gravy so it clings to the chicken.
Butter
Adds fat and richness, helping the coating brown in the oven.
Thickened milk
Adds body and creaminess to the gravy.

The step that matters

Heating the gravy until it scalds. Gravy made with milk can curdle or scorch if it boils hard or sits too long over heat. Heating gently until just scalding keeps it smooth and thickened.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (chicken, pepper, flour, butter, milk):

  1. Cinnamonfits about as well
  2. Thymefits about as well
  3. Nutmegfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, pepper, flour, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
