What each ingredient does

Potatoes
Starch that breaks down and thickens the soup as it is mashed.
Heavy cream
Adds fat and richness, giving the soup a smooth, velvety texture.
Butter
Adds fat and flavor, rounding out the richness of the soup.

The step that matters

Mashing the potatoes. Mashing the potatoes finely while they are still hot releases starch gradually and makes a smooth texture. Overworking cooked potatoes can turn them gluey, so mash gently and only until smooth.
