Buckwheat Cakes

Ingredients

Directions

  1. In a large bowl, combine buckwheat flour, yeast, salt, cornmeal, and molasses.

  2. Add warm water gradually to create a thin batter and beat well.

  3. Set the batter in a warm place to rise.

  4. If the batter is slightly sour in the morning, add a small amount of baking soda dissolved in hot water.

  5. Each night, reserve about 1 cup of the batter to use as a starter for the next day.

  6. Continue adding the usual amount of flour each night and beat well before cooking.

  7. For variation, you can use two-thirds buckwheat and one-third oatmeal, omitting the cornmeal.
