Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Full grown mushrooms
Supply the main juice that becomes the body of the ketchup.
Coarse sea salt
Draws moisture out of the mushrooms and helps preserve the liquid.
Cloves
Add a warm, pungent aroma to the liquid.
Jamaica ginger
Adds a sharp, warm aroma and spice to the liquid.
Black pepper
Adds sharp heat and a savoury bite to the liquid.

The step that matters

Boil down to half the liquid. Reducing the liquid concentrates its flavour and thickens it. A slow fire lets it reduce evenly without scorching on the bottom of the pan.

Swap the ginger

How well each one fits the dish's main ingredients (mushroom, clove, pepper):

  1. Thymefits better
  2. Allspicefits better
  3. Marjoramfits better
  4. Gingerthe original

Fit is the average pairing score against mushroom, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
