What each ingredient does

Ripe tomatoes
Form the main body and provide the moisture and bulk of the catsup.
Horseradish
Adds sharp, pungent heat that cuts through the richness of meat.
Mustard seeds
Contribute a sharp, tangy bite and a bit of texture to the sauce.
Cider vinegar
Adds acidity that brightens the flavor and helps preserve the uncooked relish.
Brown sugar
Adds sweetness and a molasses note that balances the sharp and acidic flavors.
