Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Preheat oven to 350°F (175°C).

  2. Place the halibut in a baking pan and dredge it with flour and coarse sea salt.

  3. Sprinkle the bits of salt pork on top of the halibut.

  4. Pour hot water into the pan until it reaches the bottom of the fish.

Bake and make the gravy

  1. Bake for about 1 hour.

  2. Whisk together the egg, butter, flour, and enough water to achieve your desired consistency.

What each ingredient does

Halibut
Is the main protein that cooks through gently in the oven.
Salt pork
Renders fat over the fish, adding moisture and savory flavor as it bakes.
Egg
Thickens the gravy as it sets with heat, giving it body.
Butter
Adds fat and richness to the gravy.
Flour
Thickens the gravy and helps form a smooth, cohesive sauce.
