Candied Orange or Lemon Peel

Ingredients

Directions

Soak and simmer

  1. Soak and boil the orange or lemon peels until tender, similar to making preserves.

  2. In a pot, combine 1 quart of water with 1 pound of sugar to make a thin syrup.

  3. Simmer the peels in the syrup for 30 minutes, then pour into a bowl and let stand overnight.

Candy and dry

  1. Prepare a syrup with 1 pound of sugar and 1 pint of water, boiling until it falls from the spoon in threads.

  2. Add the peels to the syrup and boil for another 30 minutes.

  3. Remove the peels and drain them on a sieve.

  4. As the candy dries, transfer it to a dish to dry in a warm place.

What each ingredient does

Sugar
Forms the syrup that preserves the peel and gives the candy its sweetness and firm texture.
Orange or lemon peels (in the method)
Provide the candied fruit itself, flavoring the syrup with their aromatic oils.

The step that matters

Boiling the peels in the thick syrup. The peels must be tender before candying, and the syrup must reach the thread stage so it thickens enough to set as the peel dries. Sugar concentration drives preservation and texture.
