Escalloped Meat

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chop the cold roast or steak finely and season with sage, pepper, and coarse sea salt.

  2. Prepare bread or crackers as for stuffing a turkey.

  3. Butter an earthen baking dish.

Assemble

  1. Cover the bottom of the dish with a layer of stuffing.

  2. Add a layer of meat, then alternate layers of stuffing and meat until the dish is full.

  3. Finish with dressing.

  4. Cover the top with small pieces of butter.

Bake

  1. Bake at 400°F (200°C) until nicely browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bits of cold roast or tender steak
Provides the meat that makes up the body of the dish.
Bread or crackers
Forms the stuffing layers that soak up juices and hold the dish together.
Butter
Adds richness and helps the top brown in the oven.

The step that matters

Bake until nicely browned. Baking at 400°F until the top is nicely browned sets the layers and develops browning flavour. Pulling it too early leaves the top pale and the centre under-heated, while overbaking can dry the meat and bread.

Swap the sage

How well each one fits the dish's main ingredients (pepper, bread, butter):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against pepper, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
