Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the bulk and meaty body of the mincemeat filling.
Suet
Adds richness and fat that keeps the filling moist and tender.
Raisins
Supply sweetness and chewy body to the filling.
Brown sugar
Adds sweetness and helps preserve the mixture while it stores.
Wine and brandy
Add liquid and alcohol that moisten the mixture and help it keep.
Tart apples
Add acidity and moisture to the pie filling.

The step that matters

Packing the pie filling. Filling the crust only half full before adding the meat mixture lets the filling settle without overflowing or leaving the crust underfilled. Leaving room under the pastry lid helps the filling heat through and the top bake evenly.
