Pickled Mangoes

Ingredients

Directions

  1. Cut a round piece from the top of each musk melon and remove the seeds.

  2. Tie the pieces back on with thread and soak in strong brine for 10 days.

  3. Drain and wipe the melons, then place them in a kettle with nice leaves underneath and on top.

  4. Add a small piece of alum and heat over low fire, keeping the kettle tightly covered.

  5. Prepare a filling with scraped horseradish, white mustard seed, mace, nutmeg, green ginger, pepper, turmeric, and sweet oil.

  6. Fill each melon with the mixture and add a small clove of garlic to each.

  7. Replace the top pieces and sew them back on with strong thread.

  8. Pack the filled melons into stone jars and pour boiling vinegar over them.
