Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Smothered Chickens

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and stew

  1. Cut the chickens in the back and lay them flat in a dripping pan with 1 cup of water.

  2. Stew in a 350°F (175°C) oven until they begin to get tender.

  3. Remove from the oven and season with salt and pepper.

Roast and thicken

  1. Rub together 1½ tablespoons of flour and 1 tablespoon of butter, then spread over the chicken.

  2. Return to the oven, baste well, and cook until tender and nicely browned.

  3. Mix 1 cup of thickened milk with a little flour into the gravy in the pan.

  4. Heat on the stove until it scalds, then pour over the chickens.

  5. Garnish with chopped parsley if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the pan gravy and helps form a browned coating on the chicken.
Butter
Adds fat that carries flavour and promotes browning on the chicken.
Thickened milk
Adds body and creaminess to the gravy poured over the chickens.

The step that matters

Scalding the thickened milk into the gravy. Adding flour-thickened milk to hot pan juices and heating until it scalds lets the starch swell and thicken smoothly. Adding it cold or skipping the heat can leave the gravy thin or lumpy.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, pepper, flour, butter, milk):

  1. Cinnamonfits about as well
  2. Thymefits about as well
  3. Nutmegfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, pepper, flour, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
