Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and stuff

  1. Wash and dry the turkey.

  2. Stuff the turkey with a mixture of soaked bread, salt, pepper, thyme, butter, and egg.

  3. Sew up the turkey snugly and place it in a roasting pan with a little water.

Roast

  1. Roast slowly at 300°F (150°C) for about three hours.

  2. When the turkey begins to brown, rub the skin with a little butter to prevent blistering.

Make the gravy

  1. Boil the giblets in water.

  2. Chop the giblets finely.

  3. Add the chopped giblets to the gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Provides the main meat, which cooks through during the slow roast.
Dry bread
Soaked and pressed, it adds moisture and bulk to the stuffing.
Butter
Adds fat and richness, and helps the skin brown and resist blistering.
Egg
Binds the stuffing mixture so it holds together while cooking.

The step that matters

Rubbing the skin with butter when it begins to brown. Browning skin can blister as moisture escapes and the surface dries too fast. A light coat of fat slows this and promotes even browning.

Swap the thyme

How well each one fits the dish's main ingredients (turkey, bread, pepper, butter, egg):

  1. Parsleyfits about as well
  2. Sagefits about as well
  3. Nutmegfits about as well
  4. Thymethe original

Fit is the average pairing score against turkey, bread, pepper, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
