Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Break down into the liquid base, giving the gumbo its body and acidity.
Okra
Releases a natural thickening mucilage that gives the gumbo body as it cooks.
Chicken
Provides the main protein, cooked tender in ham gravy that flavours the pot.
Egg yolks
Enrich and thicken the mixture when combined with the hot chicken and liquid.

The step that matters

Adding the egg mixture to the hot chicken. Egg yolks thicken when heated gently but can curdle if they meet very hot liquid too quickly. Stirring the egg mixture into the chicken and tomatoes gradually keeps it smooth.
