Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the tender, moist body of the dish once cooked through.
Beaten egg
Acts as a binder so the crumb coating adheres to the slices.
Bread crumbs or cracker dust
Forms a crisp, golden coating that browns in the oven.

The step that matters

Heat enough cooking fat in a pan to prevent sticking.. Eggplant absorbs oil readily and its coating can stick to a dry pan. Enough fat in the pan keeps the crumb coating from tearing off and helps it brown evenly.
