Cook the steak

  1. Broil the steak quickly, turning often.

  2. Place the cooked steak on a hot dish, season with salt and pepper, and lightly butter it.

  3. Cover the steak and keep it warm in a plate-warmer.

Make the onion butter and serve

  1. Fry the sliced onion in 2 tablespoons of butter for 3 minutes without letting it scorch.

What each ingredient does

Beefsteak
Provides the main meat, cooked quickly by broiling to stay tender and juicy.
Butter
Adds richness and moisture, and carries the flavour of the fried onion over the steak.
Onion
Browns in the butter to give a sweet, savoury flavour to the sauce.
Lemon juice
Adds acidity that brightens the rich butter and balances the meat.

The step that matters

Frying the onion without scorching. Scorched butter and onion turn bitter and dark, spoiling the flavour of the sauce. Gentle frying lets the sugars in the onion brown slowly and sweetly.
