What each ingredient does

Pearl barley
Swells as it simmers, thickening the broth and giving it a chewy texture.
Mutton
Releases flavor and gelatin into the water during long slow cooking, enriching the broth.
Carrot
Adds sweetness and body to the broth as it cooks.

The step that matters

Cooking slowly for 5 hours. A gentle, low simmer draws flavor and gelatin from the meat and bones while keeping the broth clear. Boiling hard would make it cloudy and can toughen the meat.

Swap the onion

How well each one fits the dish's main ingredients (mutton, carrot, pepper, barley):

  1. Leekfits better
  2. Turnipfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against mutton, carrot, pepper, barley. Candidates are from the same food group and used in at least 100 recipes.
