What each ingredient does

Green tea
Supplies the leaf compounds that dissolve into the water to give the tea its flavour and colour.
Boiling water
Extracts flavour from the tea leaves and carries it into the drink, with more adding strength.

The step that matters

Let it steep for 15 to 20 minutes. Steeping draws flavour compounds out of the leaves over time. Oversteeping extracts more astringent, bitter compounds, so the timing controls whether the tea tastes smooth or harsh.
