Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Do not drain the liquor from the oysters; fork them out as you use them.

  2. Cover the bottom of a well-buttered dish with a layer of dry bread crumbs, sprinkle with salt and pepper, and dot with butter.

  3. Moisten the crumbs with cream.

Assemble and bake

  1. Layer oysters and bread crumbs alternately until the dish is filled, finishing with butter and cream on top.

  2. Cover with a plate to keep in the flavor.

  3. Bake at 350°F (175°C) for 45 minutes or until the juice bubbles to the top.

  4. Remove the plate and brown for 2-3 minutes on the upper shelf of the oven.

What each ingredient does

Oysters
Provide the main flavor and, with their liquor, the moisture that soaks into the crumbs.
Bread crumbs
Soak up the oyster liquor and cream to form a soft, set layered body.
Cream
Moistens the crumbs and adds richness to the baked custard-like layers.
Butter
Adds fat and richness and helps the top brown in the oven.

The step that matters

Covering with a plate. Covering the dish traps steam so the oysters cook gently and the liquid bubbles through the crumbs. Removing the plate afterward lets the top brown.
