Devilled Crabs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the crabs until cooked, then remove the meat and chop it finely.

  2. Mix the crab meat with one third of its quantity in cracker dust or bread crumbs, mustard, red and black pepper, coarse sea salt, and butter.

  3. Return the mixture to the top shells of the crabs.

  4. Bake in a preheated oven at 400°F (200°C) until golden.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
