Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which becomes tender during stewing in the gravy.
Butter
Adds richness and body to the sauce when worked in to thicken it.
Egg yolks
Thicken the sauce and give it a smooth, rich texture as they set gently with heat.
Gravy
Forms the liquid base of the stew, carrying flavour and moisture to the pigeons.
White wine
Adds acidity and aroma that brighten the savoury gravy.

The step that matters

Thicken the sauce with butter and egg yolks. Egg yolks thicken through gentle heat; if the sauce boils after they are added, they can scramble and curdle, leaving the sauce grainy instead of smooth.

Swap the mace

How well each one fits the dish's main ingredients (pepper, clove, butter, white wine, mushroom, lemon, onion):

  1. Thymefits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against pepper, clove, butter, white wine, mushroom, lemon, onion. Candidates are from the same food group and used in at least 100 recipes.
