What each ingredient does

Egg
Thickens the broth as it heats, giving it a smoother, richer body.
Flour
Stabilises the egg mixture so it blends smoothly and thickens without curdling.
Butter
Adds fat for richness and a silkier mouthfeel to the finished broth.
Milk
Adds creaminess and mild sweetness to the broth.
Chicken
Provides the main meat and, through slow simmering, the savory base of the broth.

The step that matters

Stirring the egg mixture into the hot liquid. If the egg is added to liquid that is too hot or not well blended, it can scramble into lumps. Keeping the mixture smooth and stirring it in gradually helps it thicken the broth evenly.

Swap the onion
