Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, juice and gentle acidity of the dish.
Lard
Fat for frying the tomatoes, giving a rich flavour and light browning.
Cream
Adds richness and creamy body to the gravy.
Flour
Starch thickens the cream into a smooth gravy when heated.

The step that matters

Stirring the flour into the cream. Flour must be well mixed into the cream so it disperses without lumps. Its starch then swells and thickens the gravy as it heats.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, cream, flour):

  1. Spinachfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Tomatothe original

Fit is the average pairing score against pepper, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
